Chickpea Sandwich Filling

This is good as a sandwich filling or eaten as a salad. I used red bell pepper when I had no celery and it was just as good.

1 can garbanzo beans, drained and rinsed
1 stalk celery, finely chopped
1/2 c. onion, finely chopped
1 tbsp. real mayo
1 tbsp. lemon juice
1 tsp. dried dill
salt and pepper, to taste.

1. Pour drained and rinsed chickpeas into a medium bowl and mash with a fork. Add celery and onion.
2. Mix mayo, lemon juice, dill and salt and pepper to taste in a small bowl. Pour over chickpea mixture and combine.
